Dark Chocolate Dipped Pear Popsicles

In the midst of this DC heatwave it’s hard to not crave something cold, sweet, and refreshing. Ice cream is always an option, but not always the healthiest choice. And even if you choose to tackle making ice cream yourself, you have to remember to freeze the mixing bowl a full 24 hours ahead of time. That requires a certain amount of foresight that, I’ll be honest, I do not have. What I do have is a popsicle mold, pears, and a whole-food recipe that will undoubtedly refresh and rejuvenate my heat-weary soul. Who needs foresight when you can have chocolate covered popsicles?

Ingredients:

  • 2 pears, peeled and cored
  • ½ cup water
  • 2 Tbsp honey, agave, or other liquid sweetener
  • 1 Tbs fresh lemon juice
  • 1 cup Harper Macaw dark chocolate, we used 85%, chopped into chip sized pieces
  • 2 Tbs coconut oil
  • Toppings:
    • Drizzle of peanut butter, coconut shreds, cacao nibs, dried berries, etc

Special Equipment:

  • Blender or food processor
  • Popsicle molds

Directions:

  • Place pears in a preferably high speed blender (for super silky-smooth popsicles), followed by water, lemon juice, and honey.
  • Blend until smooth, then fill your popsicle molds and place in freezer until completely frozen. Depending on your freezer this could take from 3 hours to overnight.
  • Once the popsicles are frozen, combine coconut oil and chopped chocolate in a glass bowl set over a pot of boiling water to form a double boiler and melt, stirring until smooth. Or alternatively, combine chocolate and coconut oil in a microwave safe bowl and melt in 30 second increments, stirring until smooth.
  • Remove popsicles from molds by running the molds under hot water for a few seconds, they should slide out with some elbow grease. Dip each popsicle into the melted chocolate. Quickly sprinkle toppings of choice onto the chocolate before it begins to set and harden. For easier dipping, pour melted chocolate into a glass or mug with high sides and is wide enough for your popsicles
  • Refreeze on lined baking sheet if necessary. If not necessary, enjoy immediately!
